I suggest visiting around 4 PM when the sun is setting. The lighting makes for awesome photos, and the crowd starts thinning out, so you can enjoy the architecture more.

I recommend checking out the nearby restaurants first before diving into a meal; I found a place that had fresh seafood at a lower price compared to the more touristy spots right on the plaza.

Check out the small shops around the plaza but don't buy anything too quickly; some places have negotiable prices! I found a few handmade items at half the price after chatting with the owners.
