Definitely try to book your visit for around 10 AM. It's much quieter then, so you can really take in the beauty of the vineyard without fighting the crowds. Plus, you'll have the erste tastings available

If you can, wait for the harvest season (around September to October). Seeing the grape picking is a sight to behold, plus the story behind it all adds to the experience. Just be aware it can be a bit busier, but worth it!
