I suggest visiting on a weekday around 10 AM when it's less crowded and you can enjoy more personalized service. It was way less hectic for me!
Make sure to ask for samples before buying. I thought I knew what I wanted, but tasting a few different cheeses opened up my options and saved me money!
If you can, bring a small cooler bag. I got some delicious cheeses to-go, and they were fine on the ride home, but a cooler would have kept them even fresher longer!
