my advice is to wear some comfy hiking shoes. the trek up to the takeoff spot can be a bit steep and slippery, and flip-flops absolutely won't cut it.
I recommend booking your paragliding session in advance, especially on weekends. I showed up and had to wait longer than I expected. Better to secure your spot early!
I think the best time to fly is around 2 PM. The winds are calmer then, and you get a beautiful view of the valley. My first flight was a bit bumpy earlier in the day!
